Blackberry Oysters

I recently had the chance to try a new oyster from Chesapeake Bay called the Blackberry Oyster. The name itself was enough to pique my interest. After all, “sweet” isn’t typically what comes to mind when thinking about oysters, so I was curious about its flavor profile. For a split second, I even wondered if there was some story behind the name—perhaps someone found oysters growing on a Blackberry phone?

These oysters are medium to small in size, with a relatively smooth shell—not too pointy. The taste? Mild, with a delicate hint of sweetness. I resisted adding mignonette or hot sauce, as I really wanted to experience the pure flavor. That said, I imagine a mignonette made with blackberry vinegar would have beautifully enhanced the natural sweetness and added a fun, thematic touch.Tasting this oyster was a delight, and it led me down a rabbit hole of learning about the Oyster Wars, Oyster Pirates, and efforts to rebuild the Chesapeake Bay habitat.
